The harvest begins in mid-September for Trebbiano di Soave and in October for the Garganega grape. Destemming and pressing of the grapes. Selection of free-run must and fermentation at controlled temperature (16°-18°C) in vitrified concrete tanks. Maturation of the wine in vitrified concrete tanks - ''Tulipes'', for at least 12/15 months. During maturation the wine remains in contact with the fine lees, through weekly bâtonnage, to enrich itself in structure and complexity. After bottling the wine rests for a few months in glass, before being released marketing. Color: Straw yellow with brilliant reflections, greenish when young, golden after aging. Perfume: Fresh, mineral and floral. It has a broad bouquet with hints of elderberry, aromatic herbs, limoncella apple, pear and yellow peach, on the finish crunchy cherry, almond and elegant citrine notes. The mineral note of flint is important. Palate: Frank and vertical sip. Fresh, elegant and savory, well balanced, long and persistent. Eclectic in pairings, ideal for an aperitif throughout the meal with dishes of good fatness and sweet trend, like a cheese soufflé or a creamy risotto. Perfect with vegetable flans, delicate fish, shellfish and homemade stuffed pasta or pappardelle with a delicate farmyard ragù.
