Pomino Bianco Reserve DOC On the road to Pomino I get excited every time I discover this unique corner of Tuscany: hills and cypresses leave suddenly the place to steep slopes, cooler temperatures in summer and snow in winter, magnificent fir forests and centuries-old sequoias that surround the Chardonnay vineyards, planted here since 1855. At an altitude of 700 meters it was born in 1973 the Cru Benefizio, the first white wine in Italy fermented and aged in barriques. Climate trend The budding of the vines in spring 2020 was homogeneous and early, certainly due to the mild winter characterized by days with temperatures that are never too cold. The development of the shoots was uniform and the leaves fin immediately of an intense and brilliant green: a clear sign of plants in full health. In the two months preceding the collection during veraison of the grapes, regular rains and lots of sun in the rest of the period. At the time of harvesting the grapes are crunchy results, with good acidity and aromatic load. If the first bunches have arrived in the cellar in a sanitary manner perfect, the grapes harvested in the following days were no less: the hot and dry September days have allowed to carry out a very high quality harvest to the end. Vinification and maturation The Benefizio vineyard is located at an altitude of 700 m a.s.l., with a southern exposure and a predominantly sandy. The Chardonnay grapes were harvested in boxes by hand with extreme care and attention. Once arrived in the cellar, the pressing to which they were subjected turned out to be extremely soft and delicate, already allowing starting a good extraction of clear must, further clarified after cold decantation. The musts like this obtained were placed in barriques, 50% new and 50% first passage, where they underwent fermentation alcoholic and only partially the malolactic one. Subsequently the wine is aged in wood, on the lees, with bâtonnagecarried out as needed. After a further period of aging in the bottle, Benefizio Riservahas reached its maximum taste-olfactory expression in terms of elegance and harmony.
