PRODUCTION AREA:
Loc. Villa a Sesta, Castelnuovo Berardenga (SI), Tuscany
HARVEST:
When the wine grapes are harvested, the best bunches, sparse and small, are left in the vineyard to over-ripen until harvesting after 2-4 weeks depending on the seasonal trend. The grapes are then dried naturally in ventilated rooms until the established parameters are reached.
VINIFICATION:
After a selection of the dried grapes and a soft pressing, the vinification takes place in stainless steel at a controlled temperature (15/16 °) with a partial maceration of the skins that separate after a few days from the start of the fermentation that is left to develop until a good balance between alcohol and sugar content is obtained.
TASTING NOTES:
intense antique pink tending towards amber. Characteristic, complex, intense and persistent with hints of cooked fruit, candied fruit and honey enhanced by its alcohol content.
PAIRINGS:
vAn extraordinary dessert wine, it pairs well with all traditional Tuscan dry and fresh sweet products but also pairs well with short and medium-aged pecorino cheeses.
