Category: light intensity oil, balanced in the perception of both bitterness and spiciness; characterised by soft but persistent notes of grass and fresh vegetables.

Fragrance: the bouquet opens with light and enveloping sensations of fresh grass: parsley, chives, celery and courgette predominate, together with a note of green apple.

Taste: in the mouth the flavour is fresh, with typical notes of grass and fresh vegetables such as chives; then we find a soft but persistent sensation of wild asparagus. Not aggressive in the perception of bitterness or spiciness, it flows with a simple note of white pepper.

Food pairings: recommended for raw fish and raw meat, sweet and savory flans and mature cheeses; excellent for finishing complex and spicy dishes where the richness of flavors is enhanced.
