Winemaking
The Vino Nobile di Montepulciano “Antico Colle” is made from Sangiovese grapes and a small percentage of Merlot.
The harvest of the grapes usually takes place in the month of October and in any case only when the fruit reaches optimal conditions.
The alcoholic fermentation takes place in stainless steel vats at a controlled temperature (not exceeding 30°C).
Fermentation and maceration last 18-22 days. The maceration on the skins is followed by the final racking carried out with a soft pressing of the pomace.
Maturation
The maturation in wood takes place for 18 months in small and medium capacity Slavonian oak barrels.
Tasting Notes
Intense ruby red colour, deep with intense aromas of fruit and red berries, followed by tertiary aromas such as leather, tobacco, black pepper with a balsamic note.
