Grapes:
100% Sauvignon (old vines)
Vineyards:
The grapes come from 40-year-old vineyards, managed organically and treated
only with copper and sulfur and fertilize with stable manure. The land, mainly
clayey and rich in quartz, they are located 200 m above sea level and 10
km from the coast,
in a unique and uncontaminated terroir, characterized by important excursions
temperatures between day and night.
Plant:
High spurred cordon with 3300 vines/hectare, to guarantee shading
of the grapes and to benefit from the sea breezes.
Harvest:
Once fully ripe, the grapes are selected and harvested manually and
placed in 18 kg boxes. The harvest takes place in the last decade of
August, from the early hours of the morning, to guarantee a low temperature
of the grapes upon arrival in the cellar.
Winemaking:
The grapes, before being pressed, are placed overnight in a cold room in order to
have a greater extraction of perfumes and avoid oxidation. We then proceed
with the soft pressing of the whole bunch. Decantation follows for 36 hours and
fermentation in stainless steel at a controlled temperature of 16°C. All
the energy used during the production process comes from renewable sources.
Wine:
Straw yellow with light greenish reflections. On the nose it opens with
naturalness and elegance on exotic fruit aromas (passion fruit) with
mineral traces of flint. Fresh and sharp in the mouth, it leaves nothing to be desired
with velvety and aromatic notes, with a savory, harmonious and persistent finish.
