Grapes: Pinot Noir 60-70%, Chardonnay 30-40%.
Vineyards: Franciacorta (BS) in the municipality of Capriolo.
Production cycle: fermentation at a controlled temperature in steel tanks and to a small extent in oak barrels, followed, in spring, by draft with the start of a slow refermentation in the bottle according to the traditional Franciacorta method. The bottles remain in the stack for at least 60 months (total 68 months from the harvest), guaranteeing the unmistakable bouquet due to the contact and autolysis of the yeasts. After disgorgement, with the addition of a sugar-free dosage syrup, the Gualberto undergoes further refinement in the cellar for a few months.
Color: beautiful bright yellow color with abundant, fine and persistent perlage.
Nose: fresh and sweet with fruit, peach, orange, melon, crossed by a beautiful mineral vein and also almonds, dried fruit and hints of bread.
Taste: great freshness on the palate, voluminous at the start, good creaminess. The beautiful acid vein is supported by a structure that is up to the task. Excellent persistence.
Alcohol content: 12.5% vol.
Storage of the bottles: lying down, in the dark, in a dry and cool place.
Service: serve at 10° C, preferably in a bucket with water and ice, uncorking the bottle when serving and using slender and not too narrow glasses.
Gastronomy: excellent as an aperitif with appetizers, crudités and shellfish, pasta with seafood or shellfish, baked fish.
