Etna DOC 100% Carricante From our Feudo di Mezzo winery, located in the heart of Etna viticulture, this wine is born from Carricante grapes, in search of a contemporary expression of this vine, cultivated according to sustainability and organic criteria, in the splendid and unique terroir of Etna. SOIL TYPE: soils with perfect exposure and position, black due to lava sands and therefore extraordinarily rich in minerals with abundant and large structure; all around, woods and more recent lava flows. ALTITUDE: 690–720 meters above sea level YIELD PER HECTARE: 73 quintals CULTIVATION SYSTEM: espalier with Guyot pruning system. PLANT DENSITY: 5,050 plants per hectare. CULTIVATION METHOD: according to the criteria of organic farming and the SOStain® protocol; grassed soils with spontaneous flora to increase the organic substance, promoting the vitality of the soil microfauna; phytosanitary defense with sulfur and copper in minimal quantities; fight against phytophagous insects with useful insects, sexual disruption and application of natural tonics such as zeolite, kaolin and plant extracts. HARVEST TIME: September 27 to October 2. VINIFICATION: the grapes, harvested by hand in 15-17kg crates, were immediately refrigerated at 6- 8 °C for one night; the following day they were selected by hand on a vibrating table and sent to a light crushing-destemming and soft pressing. The must decanted for 3/4 days was racked and fermented at around 15 °C, 80% in steel tanks, and 20% of the volume in 25 and 50 hl oak barrels and in Nevers oak tonneaux. AGING: until March in the same containers with movement of the fine lees. FIRST BOTTLING: June 2024. ALCOHOL CONTENT: 13.5% vol. TOTAL ACIDITY: 5.75 g/l PH: 3.31 AGING CAPACITY: from 5 to 7 years. BOTTLE SIZE: 0.75 l; 1.5 l BOTTLE WEIGHT: 400 g (0.75 l) CORK: single-piece natural cork; DIAM®. ORGANOLEPTIC NOTES: Carricante grapes on Etna always give enormous satisfaction because the marriage between the black sands and the altitude provides complex aromas and three-dimensional flavors. In this vintage we encounter notes of white acacia flowers, fresh almonds and mountain peaches on the nose; juicy and full on the palate with notes of yellow plums and prickly pears. PAIRING: Perfect with raw fish and fresh fruit, with fish first courses, stretched curd cheeses. It is also a refined aperitif.
