Grapes
Carricante 100%, native white grape variety of
Etna volcano. The grape is medium in size with peel
very pruny, yellowish green in colour. The bunches are
of medium length and moderately sparse.
Production area
Selection of grapes from vineyards located on the eastern and southern slopes
of Etna, particularly suited to the high altitude and
abundant brightness.

Climate
Mountain climate and high hills, humid and rainy in the
colder season, with high ventilation and
significant temperature excursions.
Ground
Sandy, volcanic, rich in minerals, with a subacid reaction.
Planting density
From 6,000 to 7,000 vines per hectare.
Yield per hectare
7,000 – 8,000 kg/ha
Age and breeding system
From 20 to 60 years. Tree and espalier.
Vinification and Maturation
Grapes harvested by hand around mid-October, destemmed and
pressed whole with soft squeezing. Fermentation of
approximately 12 days at a controlled temperature of approximately 18°C
steel, with a specific native yeast selected in
vineyard and cellar after long experimentation.
Maturation in tank on fine lees for a certain period.
Refinement
In bottle for 2-3 months
Organoleptic characteristics
• Visual: straw yellow with green nuances
• Olfactory: intense, delicate, with hints of apple
• Taste-olfactory: dry, mineral with a pleasant
acidity, flavor and aromatic persistence.
