If you are a lover of Stefano's Syrah and you are wondering if there could be something better, a non plus ultra, well this is Apice. Harvesting only the grapes at the peak of their ripeness, coming from the top of the de' Canonici vineyard, pressed in whole bunches with the feet, fermentation in cement with maceration from 3 to 5 weeks and aging in wood for 18 months. Available only in the great vintages. And immediately unobtainable.
We are in Cortona, south of Arezzo, a southern area of ??Tuscany a stone's throw from Umbria.

This is the land of Syrah and here in Poggiobello di Farneta, Stefano Amerighi, after several trips to the Rhone to study its winemaking secrets and clones, identified his "cru" in 2002. The soil is clay, chalk and silt and has a great wealth of microorganisms. There are 8 hectares lying on two hills facing south-southwest that he will plant with a density of 7000 vines/ha. Stefano Amerighi is a modern winemaker, sensitive, curious, but very attentive to detail and demanding. He restores the techniques of the past (not just foot-pressing), but embraces a broader concept of viticulture, which looks to sustainability and balance. His work is all about having a living land. The principles of Steinerian Biodynamics accompany his gestures, marked by the phases of the moon and the planets. The vineyard is cared for with the aim of harvesting healthy and ripe grapes: no synthetic products on the plants but use of herbal teas and natural tonics to fortify them against diseases. Biodynamic preparations and green manures for the soil and absence of selected yeasts or various additives and any interference in the cellar (absence of pumps to load the tanks and no temperature control during fermentation). Just as the peasant tradition once wanted. Because everything that is needed is in the grape and on the grape skin (if the vineyard is alive and in balance).
