The Chianti Classico Pèppoli was born in the vineyards of the Marchesi Antinori estate of the same name, located in the heart of the Chianti Classico DOCG.
It is mainly produced with Sangiovese grapes and Merlot and Syrah grapes, harvested in the second half of September. Fermentation takes place, with maceration, in stainless steel tanks at a controlled temperature of 26-28°C. After malolactic fermentation, the wine matures for approximately 9 months in large Slavonian oak barrels and a small part in barriques before being bottled.
It has a ruby red color with violet reflections. The nose opens with intense aromas of violet, enriched by hints of cherry and raspberry, with smoky nuances given by the aging in wood. On the palate it is balanced, with soft tannins and excellent flavor.
Perfect to accompany roasts and game, it is ideal in combination with medium-aged cheeses, cold cuts and cured meats.
