70% Pinot Noir and 30% Chardonnay, of which approximately 50% with reserve wines. Vinification in wood for 20%. Natural fermentation without added yeasts, only indigenous yeasts are used. First élevage on the lees that lasts about a year without burning stages; the wine clarifies slowly as it did 50 years ago. Bottled without filtering or sizing. Dosage 2 g/l.
