Scalabrone is a modern, fruity and rounded rosé, easy to drink, perfect for enjoying by the sea as an aperitif or with fish starters. It has an elegant bottle that also lends itself to accompanying a dinner. Since the 1970s Antinori had been producing rosé wine in Bolgheri and promoted it with billboards on the Aurelia with the words "Bolgheri Rosé is produced here". Before the birth of modern red wines from Cabernet and Merlot, rosés were the most popular wines of Bolgheri. This tradition still lives in the Scalabrone, the Bolgheri Rosato of Guado al Tasso, owned by the Marchesi Antinori, today obtained with a blend of international grapes. The name "Scalabrone" refers to a bandit who lived in the upper Maremma area in the early 19th century who raided traders and gave part of the stolen goods to the needy.
The grapes for the Scalabrone rosé come from vineyards with silty-clayey soil of predominantly alluvial origin, rich in pebbles. The grapes are harvested and processed separately depending on the grape variety. They are pressed and left to macerate for 2-4 hours at low temperature. They are then pressed and only the freshly pink free-run must ferments in stainless steel vats at a controlled temperature without the skins. Finally the assembly is made and the wine is bottled.
