The cold – but never biting cold – came only between January and February. Ideal rainfall in the spring also saw sharp drops in temperature until the end of May, putting a strain on vegetative growth. The use of protective and stimulating factors, such as algae and natural substances which could boost the vines’ energy, enabled us to cope well with this delicate period. Flowering, fruit set and veraison, while the climate was stabilizing, were good and well balanced overall, from a phenological point of view, helped by light rainfall that came just as the vine was beginning to show signs of water shortage. August was characterized by cool nights, good daytime breezes and some light showers. By harvest time, the temperatures had risen, but only for a few days: September was marked by dry, breezy, mild days which allow us to consider 2019 one of the best vintages in the last 15 years. Tasting notes The Bolgheri area has a fine tradition of producing rosé wines, a practice which has almost been abandoned over the past twenty years, yet is capable of expressing, as in the case of Cassiopea, an intense and fragrant spiciness as well as an aroma of woodland berries. Its litheness and agility on the palate make it an ideal aperitif wine. Food pairings Cassiopea rosé is an ideal aperitif wine and also pairs well with various appetizers such as bruschetta, lean cold cuts, mixed fried fish, tempura vegetables and mini pizzas. Perfect with savoury soups, it enhances grilled white meats and Mediterranean coastal cuisine. Also recommended with premium creamy cheeses and Italian robiola cheese, savoury ricotta and mozzarella.
