Axel Heinz – May 2018 THE CLIMATE OF 2016 In the wake of what seems to have increasingly become normality, so too was the winter of 2016 characterized by an unusually warm climate with abundant rainfall in February. The budding took place I start the last week of March. The abundance of water in the soil and the warm climate of April favored rapid vegetative development normal of the screws. Towards May, temperatures returned to normal values, slowing growth and favoring flowering, which took place in the last week of May, a period characterized by a dry climate and sunny, perfect for a good fruit setting phase. The summer was mostly characterized by poor rainfall, which caused considerable water stress towards the end of the ripening phase. Even thunderstorms that usually accompanying the month of August were missing, causing drought to characterize the first part of the collection period. Fortunately the temperatures, decidedly cooler during the night, have allowed the vines to recover from the heat of the day. Maturation continued regularly, conferring grapes have an extraordinary phenolic potential and a balanced sugar/acidity ratio. The harvest began on August 24th with the youngest Merlot vineyards. The scant rains in mid-September allowed it to be completed the harvest in practically perfect conditions, with sunny but moderately warm weather and with a sufficient amount of water in the soil to prevent the vines from sticking. The harvest ended on the 12th of October with the latest Cabernet Sauvignon and Petit Verdot. VINIFICATION AND AGING The harvest took place by hand in 15 kg boxes and the bunches were selected on a double table sorted before and after destemming and subjected to a soft pressing at the end. Every variety and every plot is was vinified separately. The alcoholic fermentation took place in stainless steel vats at temperatures between 26-30°C for two weeks followed by maceration for approximately 10-15 days. Malolactic fermentation it began in steel vats, and came to an end after being transferred to barriques (25% new and 75% old second step). The wine remained in barriques in the Ornellaia cellar at a controlled temperature for one period of approximately 15 months. After the first 12 months, assembly was carried out and then reintroduced into the barriques where it spent another 3 months. The wine remains in the bottle for six months before being introduced on the market.
