This beer is the result of the collaboration between two worlds that come together, that of wine and that of beer.
The protagonist of this creation together with the Cantina Errante brewery is the biodynamic winemaker Stefano Amerighi from Cortona.
Every year at the grape harvest the beer must is brought to the vineyard during the harvest, this is because the microflora present on the grape skin starts the spontaneous fermentation.
It is then left to rest in French oak barrels that previously hosted the best vintages of Amerighi wine and there it is left in the cellar for at least a year waiting for time to do its part.
The result is a beer that has both flavors, it is a spontaneously fermented sour beer that tastes of grapes even if it has not come into direct contact with them, it acquires the funky connotation of the barrel and that typical hint of cellar and wood.
The acidity is delicate but very characteristic, it seems like a wine dressed as beer.
It can be paired with very elaborate dishes but also with delicate dishes of which it enhances the flavor.
I like it with red tuna carpaccio or with blue cheeses, but also with pumpkin risotto with taleggio or guanciale.
