Roagna's "Pajè" is an austere interpretation of one of the best Barbaresco vineyards. The Roagna family is one of those families that has made and continues to make the history of the wine-growing Langhe, always convinced supporters of a respectful approach towards the vineyard and the environment in general. To pursue the creation of wines that are stories of their place of origin, the use of any chemical or synthetic substance in the vineyard is banned, while in the cellar the fermentations take place spontaneously and without the liquids being clarified or filtered. Today the family holdings include 12 hectares of vineyards, located between some of the best areas of Barolo and Barbaresco, and with the ownership of some plots being a monopoly of the winery.
The "Pajè" wine comes from pure Nebbiolo grapes deriving from a single historic vineyard, owned by the Roagna family since 1953. The high limestone concentration and the average age of the vines which is between 40 and 50 years allow produce grapes of the highest quality, which are harvested manually in October with a double sorting of the grapes. Fermentation occurs spontaneously in large wooden barrels, with a submerged cap maceration on the skins that lasts about 2 and a half months. Aged in large neutral oak barrels for 5 years, and no clarification or filtration before bottling.
The "Pajè" red has a ruby color that declines towards garnet more clearly depending on age. Extremely typical and varied nose, it tastes of liquorice, cherry, rosehip and tobacco, further testifying to the immense talent of Nebbiolo when vinified with such rigor. In the mouth the wine reveals all its power and class, with the rhythm marked by a tight but very elegant tannin and an overflowing freshness. The salt intake causes the liquid to fade with an almost infinite persistence. Memorable bottle, which every enthusiast should make room for in the cellar!
