Allegrini's Amarone Classico della Valpolicella is one of the most loved Italian wines in the world. Amarone in general is produced with local grapes, vinified after a drying period. It offers soft and enveloping aromas of great complexity and depth. The origins of viticulture in Valpolicella date back to Roman times, as is the drying technique, which has also spread thanks to the natural predisposition of Corvina, a thick-skinned grape, to be subjected to this type of practice. In the beginning, only sweet wine was produced from dried grapes, the famous Recioto della Valpolicella, then when a barrel of Recioto was forgotten in the cellar and the fermentation continued, consuming all the sugars, Amarone was born by chance. Today it has become the symbolic wine of the territory, especially appreciated on foreign markets. The Allegrini family represents a piece of history in Valpolicella, where they have grown grapes and produced wines for centuries. It is one of the most famous names in the wine scene of our peninsula and its labels have been a guarantee of excellence for years.
Allegrini Amarone Classico is the result of a long research process, aimed at creating a complex and rich wine, but which also preserved the fruity aromas of the starting grape, maintaining the original fragrance of the fruit intact. During the manual harvest, the healthiest and ripest bunches of Corvina, Corvinone, Rondinella and Oseleta grapes are chosen, which are then left to dry in special drying rooms until December. In this period the grapes dehydrate, losing around 40% of their weight and concentrating sugars and aromas. In the first weeks of January, the grapes are pressed and fermented in stainless steel tanks at a controlled temperature of 8-22 °C, with a duration of maceration on the skins of approximately 25 days, accompanied by frequent pumping over. The wine then ages in new barriques for 18 months, for another 7 months after blending and completes the refinement period with at least 14 months in the bottle.
Amarone wine is the result of the experience of the Allegrini family, who produces this great excellence of Valpolicella respecting tradition and the times necessary for its full and complete maturation. It is a red with great structure, destined for long aging, with interesting evolutionary prospects on an aromatic level. In the glass it presents an intense red color with garnet reflections. The olfactory picture seduces due to the softness and breadth of the aromas, which recall small berries, spices and noble woods. On the palate it is warm and enveloping, with a rich and complex body, fine tannic texture and balanced freshness. Traditional combinations with local cuisine require it on the table to accompany stews, braised meats or stewed game.
