VINIFICATION Manual selection of the best bunches and subsequent drying for about 100 days, with a weight loss of about 40%. Subsequent pressing and long fermentation with maceration.
AGEING 24 months in 500 l. French oak tonneaux; followed by 18 months in medium-large Slavonian oak barrels. Aged in bottle for 12 months.
ALCOHOL CONTENT 15% vol.
ORGANOLEPTIC CHARACTERISTICS Intense garnet red in color, it has an ethereal scent of dried fruit. On the palate it is full-bodied, warm, enveloping, dry. An important wine of rare elegance, it lends itself well to aging.
FOOD PAIRING Recommended with robust second courses of red meats such as braised meats and game, excellent with mature cheeses.
