Pinot Grigio grapes are produced on Guyot systems
located in Alto Adige and Trentino on medium and high hills between
300 and 800 meters. The soils are very rich, deep and with a
good clay and silt content are caused by erosion
of the mountain above. Exposures vary from south to
southwest.
WINEMAKING METHOD
The fermentation of the must takes place at temperature
controlled almost exclusively in steel tanks and in
small quantities in barriques. Subsequently the wine matures
for about four months on the yeasts, always separately
as during fermentation.
DESCRIPTION OF THE WINE
Pinot Grigio has a straw yellow color
intense, an aromatic floral bouquet reminiscent of flowers
acacia, sage and hay, almonds and sandalwood and yes
enriched with aromas of lime blossom and honey after a
adequate period in the bottle. On the palate the wine conquers with
its finesse, elegance and freshness. Pinot Grigio gives the
better than itself after about three/four months of aging
bottle.
COMBINATION
Wine is an ideal pairing for pasta dishes,
rice and cereals, vegetable and white meat dishes
grilled without seasonings.
