GRAPES:
100% Sangiovese
PRODUCTION AREA:
Loc. Villa a Sesta, Castelnuovo Berardenga, 420m above sea level
HARVEST:
end of September – beginning of October, when the phenolic and technological maturity of the grapes is fully reached
VINIFICATION:
The grapes are spread on small boxes in the drying room where they remain to dry for 6 months. They are then delicately pressed and the must, after a 24-hour decantation, is transferred to oak and chestnut barrels for slow and natural fermentation.
AGING:
The wine is ready no earlier than 3 years of aging in casks, with the 1970 mother.
ORGANOLEPTIC NOTES:
Amber in colour, rich and concentrated with a long persistence and enveloping aromas of bitter almonds and candied fruit, this sweet wine never ceases to amaze with ever new taste sensations. The finish is very complex and persistent. From very long aging in the bottle.
PAIRINGS:
Ideal and surprising with blue and well-matured cheeses, impeccable as a sweet meditation wine.
