Obtained exclusively from the best Sangiovese grapes from our vineyards, dried for several months on rush mats in the drying room, Occhio di Pernice is aged for a decade in caratelli, small 50-liter oak barrels, and owes much of its special character to the madre, a century-old indigenous yeast, carefully guarded by Avignonesi.
Mysterious and seductive, this surprising sweet wine offers an explosion of aromas and flavors, whose character and intensity change depending on the food paired with it.
Thanks to the ten years of aging, during which Occhio di Pernice goes through a natural oxidation process, the qualities of this wine remain intact for a very long time after the bottle has been opened, if well closed and stored in the refrigerator.
Serve at a temperature of 16°C in large crystal cognac glasses. Slowly tilt the wine on the walls of the glass to appreciate its aromatic fullness and dense structure.
