vinification and aging
The vinification takes place in typical kegs
Tuscan barrels of variable capacity between 100
and 200 liters, and is triggered by the inoculation of the so-called "mother", that is, colonies of different yeasts deriving from previous
vinification, in the must of dried grapes on racks. The maturation lasts for 8 years in
chestnut caratelli, where the fermentation
lasts a long time but intermittently, stimulated or
repressed by natural variations in temperature and pressure.

Located in Pian d’Albola, on the hills in the area
municipal of Radda in Chianti, with southern exposure. It is characterized by a pedogenetic substrate with a clayey texture of alberese,
to which the presence of a skeleton confers a
good permeability. The climate is hot and dry.
