The famous Tuscan winery Tenuta San Guido presents the red wine ‘Le Difese’, a blend of Cabernet Sauvignon and Sangiovese that makes pleasantness and versatility its salient features. This label, launched with the 2002 vintage, takes its name from the term used to indicate the teeth of the wild boar and represents an exceptional combination of Tuscan Mediterranean and French style.
‘Le Difese’ by Tenuta San Guido is born from a blend of Cabernet Sauvignon and Sangiovese, varieties grown on various morphological characteristics, partially clayey and with an abundant general presence of limestone, marl and stones. The rows, located between 100 and 300 meters above sea level, enjoy an excellent exposure to the south and south-west and the sale is carried out manually with a careful selection of the bunches, starting with the Cabernet Sauvignon and concluding with the Sangiovese. In the cellar, after a second selection, the grapes are subjected to a soft crushing and destemming, followed by alcoholic fermentation at a controlled temperature in stainless steel tanks, with 14-18 days of maceration on the skins and complete malolactic fermentation. The subsequent aging period of almost a year takes place in French oak barriques previously used for the maturation of ‘Sassicaia’ and ‘Guidalberto’.
The Supertuscan ‘Le Difese’ Tenuta San Guido is an intense ruby ??red in color. The nose offers fruity hints of blackberry and cherry that blend with hints of chocolate and aromatic herbs. Round, full and fresh on the palate, with a sweet tannic texture and a fine savoury trail. This is a Tuscan red wine of great versatility, pairing well with platters of cured meats and particularly mature cheeses as well as with first and second courses based on various meats.
