Il Pugnitello is a wine obtained from the homonymous ancient variety from Tuscany. Il Pugnitello gives birth to a wine with an unusual aromatic profile, particular and intriguing.
The yields are naturally low, about 3000 kg grape per hectare, the bunches are very small, with the characteristic shape of a fist (pugno in Italian) from which derives its name.
The grapes are hand-picked then immediately sent to the cellar where a careful selection is made, both of the bunches and of the single grapes, on a double selection belt.
The grapes drop by gravitation into the tanks where they undergo a slow and gradual fermentation for about 25-30 days without the addition of selected yeasts. The wine evolves in 10hl-barrels for about 12 months and later in a bottle for at least an year. The intense color with viola nuances, the good acidity, the finesse and the pureness of the characteristic perfumes of this rare indigenous variety, make the Pugnitello a wine with a great personality shaped by its terroir of origin.
