Late harvest is a sweet wine produced with 25% Chardonnay, 15% Gewurz Traminer and 60% Sauvignon Blanc: all vines from a dedicated vineyard with a south-west exposure. These grapes are harvested gradually from the beginning of October until the end of December.
The grapes are left to wither and mould on the plant so as to promote the sugar concentration and the growth of Botrytis; they are then picked and pressed. The wine is fermented in steel vats, where it remains for about 8 months, after which it is bottled and stored, for a minimum period, so as to undergo “refinement”.
We produce around 1200 bottles a year.
