“Paggino” – a term in the Val di Chiana dialect that refers to a small parcel of land in shaded position. This wine is a lovely fresh white withs a subtle hint of white flowers, produced from a blend of Trebbiano, Grechetto and Vermentino.
The grapes are picked by hand, care fully selected and placed in crates; following pressing and stripping the grapes are then placed in steel tanks at low temperature for one night. The day after, the grapes are pressed and accurately separated and processed. Following racking, the skins are left to ferment in steel tanks at a controlled temperature. At the end of the fermentation process and after repeated racking from the sediment, the wine is aged in steel tanks for 6 months followed by another month in bottle.
