SAVAS is the result of four different Trebbiano harvests with relative distinctions
grape processing processes in order to obtain a mature and sincere wine that could
best express the qualities of the grape variety and terroir. The result was a generous wine in the
aromas and strong taste with a clear and well-defined personality that distinguishes it from the others
classic Trebbianos. Its name comes from a game played by carefree boys who still
teenagers had decided to found SAVAS, Società Anonima Vagabondi A Spasso, for
strengthen friendships, underline belonging and sign their fun forays
which we still talk about on quiet summer evenings at the village bar. They were the boys of the
1927. Grandfather Emilio, to whom it is dedicated, was one of them.

Soil: clayey-sandy, variable from slightly acidic to acidic;

Winemaking method:
Through the four harvests it is possible to obtain freshness, from the first harvest
early, and from the others structure, colour, aromas, flavors and alcohol content
at the same time as processes that involve drying in mats and maceration in
pomace and a passage in oak barrels. The wine thus obtained is placed in steel
rest and mature in controlled temperature environments throughout the winter, in
waiting for bottling which usually takes place at the beginning of spring depending on the
lunar calendar.
SAVAS requires a bottle refinement period of at least one year.
However, the exact aging period may vary depending on the qualities and properties
characteristics of the vintage, subject to careful and constant evaluation by the winemaker.
Amount of sulphites:
SAVAS wine stands out for its low sulphite content.
Alcohol content: 12.5% ??vol.
Number of bottles produced: 1733, 283 individually labeled in dark bottle.
Aging: one year in the bottle.
Tasting notes:
Color: Straw yellow color with explicit golden reflections typical of well-ripe grapes;
Smell: fruity, aromatic herbs, floral with notes of vanilla.
Taste: On the palate the structure of the wine is serious, solid; the feeling is still growing
gustatory sensation in the center of the mouth.
Serving temperature: 8°-10° C.
Pairings: when sipped, it blends well with important white meat main courses
like a fragrant carré of Cinta Senese roasted with aromatic herbs, pici with ragù
white wine, white game, cold cuts of wild boar, fallow deer, deer, cheeses
medium seasoning.
Note: It is recommended to enjoy chilled in a large glass.
