Straw yellow color with soft golden reflections, fine and persistent perlage. The nose denotes intense and enveloping aromas, notes of ripe fruit and light hints of almond and hazelnut stand out. Vineyard Age From the selection of vineyards in the seventies and eighties, in-depth investigations were conducted to identify the most suitable mother plants for the grafting and replanting that took place in the early 2000s. After careful selection, the grapes are softly pressed. The must obtained is cold decanted, racked and fermented at a controlled temperature. Bottling takes place in spring by assembling the new wine with a small selection of the best wines from the previous harvest, adding sugars and selected yeasts to start the second fermentation. After 32 months of refermentation in the bottle, the disgorgement and topping up with liqueur d’expedition are carried out. The refinement in the bottle will continue for at least 3 months before proceeding to the sale.
