The harvest takes place at different times for the two varieties. Cold maceration on the skins, fermentation at 16 °C in steel.
Pied de Cuve is prepared in spring in wine rests on its yeasts for at least 24 months. Disgorgement 2 months before being put on the market. The wine has a bright gold color, with greenish reflections; fine and persistent perlage. On the nose it expresses itself with hints of white peach, notes of bread crust and honey and mentholated hints. On the palate it is fine, very fresh, with a pleasantly floral finish.

Cellar The Baldetti family has been growing grapes and producing wine for 4 generations. In the 1970s, the company was one of the first in the province to sell bottled wine. The vineyards, still owned by the family, are located in Pietraia, whose name derives from the composition of the subsoil, rich in sandstone. The terroir therefore gives the wines minerality and flavor, while the proximity of Lake Trasimeno creates a microclimate that is extremely favorable to viticulture. The vineyards located at about 300 meters above sea level are composed of the varieties Chardonnay, Grechetto, Trebbiano, Malvasia, Sangiovese, Syrah, Merlot. The care and dedication of this family produces wines of great cleanliness and character, where the territory and the imprint of the vine are respected.
