Sparkling wine obtained from Sangiovese grapes with the addition of a small quantity of Chardonnay, certified organic and entirely produced in our company, following the principles of biodynamic agriculture. The grapes selected in our vineyards are hand-picked with early harvesting in order to maintain good acidity and freshness. The vinification involves a soft pressing of the whole bunch, alcoholic fermentation in stainless steel tanks and subsequent refermentation in the bottle with permanence on the yeasts for at least 24 months.
