The Charmat Method Sparkling Wine “Bollamatta” is a rosé sparkling wine that demonstrates how the Bibi Graetz winery can easily move from more demanding and full-bodied labels to lighter and more casual wines, always guaranteeing an excellent quality standard, as also demonstrated by the scores obtained by this bottle internationally. The soul is brazenly drinkable, allowing the "Bollamatta" to stand as the absolute protagonist of different situations and moments. The aromas on the nose are fruity, while the flavor is the key to telling us about a very enveloping and creamy taste.

This “Bollamatta” Rosé Sparkling Wine is obtained from pure Sangiovese grapes, a vine that the Bibi Graetz winery cultivates with great attention, obtaining different products and labels depending on the processing. In this case the must, after an initial fermentation in steel at a controlled temperature, is refermented in autoclaves, following the typical production principles of the Martinotti or Charmat Method, carrying out the secondary fermentation. At the end of a stabilization period, the Rosé is finally bottled and placed on the market.

Bibi Graetz's "Bollamatta" develops a pink color in the glass that also tends towards copper. The perlage is characterized by a fine bubble, with good persistence. It is the small red fruit that excite the palate, enriched by notes that recall various aromatic herbs. In the mouth it is light-bodied, young, with a sip characterized by a pleasant creaminess, from which a savory and fruity taste emerges.
