Grapes:
100% Sangiovese
Vineyards:
The grapes come from 15-year-old vineyards managed organically, treated only
with copper and sulfur and fertilize with stable manure. The land mainly
clayey and rich in quartz they are located 200 m above sea level and 10 km
from the coast, in a unique and uncontaminated terroir, characterized by important
temperature variations between day and night.
Plant:
Spurred cordon, with 4000 vines/hectare.
Harvest:
The grapes are selected and harvested manually and placed in boxes of 18
kg. The harvest takes place after the first ten days of September, exclusively
in the early hours of the morning, to guarantee a low temperature of the grapes
upon arrival at the cellar.
Winemaking:
Before being pressed, the grapes are placed in a cold room overnight in order to
have a greater extraction of perfumes and avoid oxidation. The bunches
they are then softly pressed obtaining a yield of 50%, followed by
fermentation with the cold technique to enhance the aromas and elegance of the wine.
After 36 months of aging on the yeasts the wine will be able to express its richness and
identity. All the energy used during the production process comes from
renewables.
Wine:
Straw yellow with reflections of ancient gold, it is extraordinary on the nose
fresh, with hints of fruit accompanied by pleasant, but not aggressive, notes
of yeasts.
Fine bubbles envelop the entire palate, in the mouth it expresses itself with great elegance,
crunchy, mineral and with good acidity.
