A wine that has become the image of the change in Sicilian wine. It was born from the desire to
compete with the world in the production of this noble and widespread grape variety. After a
long journey that began in 1985, full of surprises and successes, today the Chardonnay Planeta is an
icon for the whole of Sicily. The vineyards of Ulmo and Maroccoli, cultivated according to the criteria of sustainability and
organic, are unique in their position and terroir. The fermentation and aging in French wood,
careful and precise, gives us a wine unique in grace and power.

SOIL TYPE: in Ulmo, medium-textured soil, from medium-deep to deep with
an abundant skeleton made up of pebbles,
medium calcareous with fractions of dark
and vegetal soils. In Maroccoli, calcareous soil rich in
medium-sized skeleton, slightly clayey with
an abundant silty fraction.
ALTITUDE: Ulmo 250 m above sea level;
Maroccoli 415 meters above sea level.
YIELD PER HECTARE: Ulmo 70 quintals;
Maroccoli 75 quintals.
TRAINING SYSTEM: espalier with Guyot
pruning system.
PLANT DENSITY: Ulmo 4,545 plants per
hectare; Maroccoli 5,050 plants per hectare.
CULTIVATION METHOD: according to the
organic farming criteria and the SOStain® protocol;
soils covered with grass with clover, vetch, yellow mustard and
spontaneous flora to increase the organic
substance and nitrogen content, promoting the
vitality of the soil microfauna; phytosanitary
defense with sulfur and copper in minimal
quantities; fight against phytophagous insects with beneficial
insects, sexual confusion and application of
natural tonics such as zeolite, kaolin and
plant extracts.
HARVEST PERIOD: August 22 - September 7.
VINIFICATION: the grapes were hand-picked
in 16 kg crates, refrigerated at about 12-14 °C.
They were then destemmed, crushed and
subjected to soft pressing and static sedimentation at low temperature, 6-7 °C;
subsequently the clear part was racked
and fermented in 225 l Allier oak barrels
at around 17-19 °C for 5/7 days.
At the end of fermentation the wine was
aged on the primary lees - with
bâtonnage performed weekly for the first 5
months, then every 14 days - until the
completion of the 11 months; finally it was
bottled.
AGING: in 225 litre Allier oak barrels,
40% new 30% 2nd passage, 30% 3rd passage.

TASTING NOTES: a pure Chardonnay that
clearly highlights the
characteristics that have made it so famous.
From the richness of the light gold color, deep
but transparent, we can sense the pleasant contrast
of creaminess and crunchiness that awaits us
upon tasting. It is in fact a soft white supported
by a refreshing acidic vein that accompanies
the entire tasting. A subtle mineral trait makes the
flavor of ripe yellow peaches, acacia honey and almond
paste harmoniously dialogue with the more peaty, cereal and
toasted aromas that appear on the powerful and
balanced finish.
PAIRING: Try it, for a change, with some
lightly seared foie gras or roast veal
with a mushroom sauce.
