The Sauvignon blanc vines are Guyot trained and grow
between 400 and 800 meters. The soils originating from dolomitic erosion,
they are exposed towards the south and south-west.
The pressed grapes are gently pressed after spending one hour
overnight maceration at low temperatures. A part of the must
it is fermented in steel tanks and partly in barriques,
after which it matures in the same containers for about eight months
contact with fine yeasts.
Sauvignon has a light straw yellow color
with greenish reflections. On the nose it seduces with a colorful bouquet
of aromas, among which elderflowers, white peach, notes stand out
complex of dried fruit and oriental aromas. It releases on the palate
a lively and savory acidity with mineral notes, while in the finish
it is very persistent and stimulating and is characterized by a
pleasant fullness and elegance.
This Sauvignon is not an everyday wine, but rather a wine
considered a valid pairing with dishes such as tartare
of tuna, veal with tuna sauce, white meats and Asian dishes
slightly spicy. It is a wine that invites you to experiment and
discover new combinations and ingredients from different countries
far away.
