TYPE: Dry rosé wine. PRODUCTION AREA: Municipality of Gavorrano – Località Grilli In the valley between Vetulonia and Giuncarico D.O.C Maremma Toscana. GRAPE VARIETY: Sangiovese. SOIL COMPOSITION: Stony marl soil, with silt and medium-textured clay. VINIFICATION: "White vinification" of the black Sangiovese grapes, which initially remain in contact with the skins for a very short period of maximum 24 hours. Fermentation at controlled temperature (18°) in steel vats for 14 days. COLOUR: Soft pink. BOUQUET: Fresh with pleasant hints of small berries and vanilla. TASTE: Good sapidity, excellent balance and surprisingly long and pleasant finish. PAIRING: Perfect as an aperitif, it goes very well with fresh first courses, fish, white meats, vegetable dips and slightly aged cheeses.
