Produced with the RIPASSO technique, deliberately applied in a more restrictive way than the production specification, it is obtained by passing the Valpolicella Classico over the Amarone marc only once. The result is an authentic local wine that elegantly displays a beautiful complexity of fruity aromas and spicy tones well supported by good acidity and a fair amount of alcohol.

Vineyards Owned by the Speri company, located in the heart of the Valpolicella Classica between 120 and 350 m./a.s.l., precisely in the municipalities of San Pietro in Cariano, Fumane and Negrar.
Grape varieties Corvina Veronese 70%, Rondinella 20%, Molinara and other native varieties 10%.
Winemaking After manual harvesting, immediate pressing of the grapes and subsequent maceration at a controlled temperature. In early March, the Valpolicella Classico is passed over the Amarone marc only once.
Ageing 12 months in 20 hl Slavonian oak barrels. Aged in bottle for 6 months.
Alcohol content 13.5% vol.
Organoleptic characteristics Intense red color with hints of red fruit, spices and cocoa. In the mouth it is warm and soft, well balanced by a round tannin.
Food pairing A very versatile wine, ideal with meat dishes and cheeses.
