The alcoholic fermentation, by indigenous yeasts, takes place in natural concrete vats and, following racking, the wine undergoes malolactic fermentation in steel. For aging, which lasts 24 months, oak barrels are preferred, while the refinement process takes place in the bottle for at least 6 months.
