Winemaking
The Vino Nobile di Montepulciano Riserva “Il Saggio” comes from Sangiovese grapes vinified in purity, selected and coming from the “Il Saggio” vineyard.
The harvest of the grapes takes place only when the optimal conditions of the fruit are reached.
The alcoholic vinification takes place in stainless steel vats at a controlled temperature (never above 30°C) using the delestage technique.
Fermentation and maceration follow a period ranging from 18 to 22 days, before moving on to a soft racking of the pomace.
Maturation
The Vino Nobile di Montepulciano Riserva “Il Saggio” comes from selected grapes and is produced only in the best years.
