VINIFICATION
The Vino Nobile di Montepulciano “Antico Colle” is made from Sangiovese grapes and a small percentage of Merlot. The
grape harvest usually takes place in October and in any case only
when the fruit reaches optimal conditions. The
alcoholic fermentation takes place in stainless steel vats at a
controlled temperature (not exceeding 30 C°). Fermentation and maceration
last 18-22 days. After maceration on the skins,
the final racking is carried out with a soft pressing of the
marc.
MATURATION
The maturation in wood takes place for 18 months in Slavonian oak barrels of small and medium capacity.
TASTING NOTES
Intense ruby ??red color, deep with intense aromas of
fruit and red berries, followed by tertiary aromas such as leather, tobacco,
black pepper with a balsamic note.
