Winemaking
The grapes are harvested by hand in October. After pressing
soft, the must ferments in contact with the skins in the tank
cement, for about 25 days, with daily pumping over and a
délestage mid-period.
Refinement
Approximately 12 months depending on the year in barrel
25hl of oak from the Fontainbleau forest.
Perfumes
Intense and penetrating bouquet; dog rose, blackberry and strawberries
wild herbs, peach and sweet spices.
Palate
Soft, classy entry, vigorous taste of fresh fruit,
gentle tannic texture, final salty hints.
Pairings
Stewed stockfish, stuffed guinea fowl, snails in spicy sauce
(Serving temperature: 16-17 °C).
