Sauvignon by Simon di Brazzan goes perfectly with appetizers, fish first courses, risottos and vegetables.
To be served at a recommended temperature of 10-12 degrees.
CELLAR
Simon di Brazzan is Daniele Drius' farm in Brazzano di Cormons, in the province of Gorizia, which for four generations has passionately produced wines with character, like the land in which they are born. The strong bond between man and the vine has led to a selection of native vines that the whole world can appreciate only in this small corner of Friuli Venezia Giulia, where the Alps protect rolling hills influenced by the sea wind. However, tradition is not an obstacle to innovation and the defense of the authenticity of the vines does not prevent their evolution and the perfect synthesis is Organic: it is respect for times and natural dynamics where history and tradition know how to present themselves in a renewed way .
GRAPE VARIETY AND CURIOSITIES
Sauvignon by Simon di Brazzan is obtained from Sauvignon grapes harvested by hand, in boxes with sorting of grapes, at the end of September. The 1997 vineyard grows on alluvial, fertile and well-draining soil. According to seasonal trends, targeted thinnings are carried out to maintain constant production of the strain. The grapes are vinified according to the traditional method, starting from the delicate destemming of the grapes and reducing the temperature of what has been destemmed using a heat exchanger. We then proceed with a light maceration of the skins in a press and a soft pressing. The must is cleaned through natural cold decantation and then ferments at a controlled temperature. The wine lies on the fermentation lees for a long time.
