7,500 kilograms of grapes, equivalent to 3,220 liters of wine (wine yield: 43%).
VINIFICATION
The Franciacorta Vintage Collection are the result of a careful selection of the grapes
and a skilful vinification conducted in full compliance with the Ca 'del Method
Woods. The grapes, freshly picked by hand in small boxes, are classified
and cool. Each bunch is selected by expert eyes and hands, and then
benefited from exclusive “terme degli acini”. A particular washing system
and hydromassage of the grapes, through three soaking tubs and a tunnel
drying After pressing in the absence of oxygen, all wine musts
base ferment in small oak barrels. To seek maximum complexity
aromatic and expressive power, without losing elegance, the barrel elevation has one
duration of only 5 months. A pair of floating tanks allows the decanting of wines
by gravity, from small barrels to aging tanks. 7 months after
harvest we proceed to the creation of the cuvée. The Vintage Collection Satèn
2013 is the result of a skilful combination of 16 Chardonnay and Pinot base wines
White. The addition of sugars in smaller quantities than the other Franciacortas
it also gives it creaminess and a particular profile, elegant and soft
strengthened by a long aging in bottle. The dégorgement takes place in absence
of oxygen, using a unique system in the world, designed and patented by Ca '
del Bosco. This avoids oxidative shocks and further additions of sulfites while making
our purest, most pleasant and longest-lived Franciacortas. Finally, each bottle
packaged is uniquely marked, to ensure traceability.
