HARVEST
2017. Vintage with low yield but redeemed by excellent quality.
A mild and dry winter followed by a spring with above-average temperatures. In the night between 18 and 19 April, sharp drop in temperatures with lows down to -4.5 degrees and with the formation of frost. Significant damage to 2/3 of the vineyard area of ??Ca 'del Bosco and the entire Franciacorta. Flowering in mid-May, with favorable weather conditions, but very low fertility due to frost. Early summer characterized by two hailstorms, respectively on 6 and 25 June, followed by peaks of heat up to 39 degrees. Final result: low yield but extraordinary quality of the ripening bunches. Harvest began on 19 August and ended in the third decade of August, harvesting beautiful, healthy and perfectly ripe grapes for the whole period. Average yield per hectare of 6,000 kilograms of grapes, equivalent to 3,420 liters of wine (wine yield: 57%).
THE VINIFICATION
Ca 'del Bosco's Chardonnay embodies the vocation of a territory in enhancing the characteristics of a grape and the ability of man to extract them and transform them into a great wine. It is the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Ca 'del Bosco Method. The grapes from 5 “elected” vineyards, just hand-picked in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "terme degli acini". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, only the best must from the first fraction is transferred for alcoholic fermentation in small oak barrels, obtained from selected woods and aged for at least 3 years. Here the wine remains on its lees for another 9 months, during which it also carries out the malolactic fermentation. With the "batonnage" operation, repeated weekly, it reaches its maximum olfactory harmony and gustatory complexity. Then the different batches are assembled and the wine is bottled by gravity, in a natural way. Thanks to innovative filling systems, the wine does not undergo oxidative shocks, flapping and further additions of sulphites. Its integrity and healthiness are guaranteed. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
