Harvest
Grapes harvested and destemmed between 12 and 21 September 2022.
Winemaking | Refinement
After harvesting, the grapes are macerated for approximately 14 hours at a temperature of 10/12°C in special containers, protected from oxygen with innovative systems through the recycling of their own fermentation carbon, in order to reduce the intake of antioxidants. Approximately 60% of the wine ages in large 20/27 HL wooden barrels and 5 HL tonneaux, the remaining part in steel containers.
Bottling
The wine is then assembled and bottled on the full moons between March and June 2023.

Color
Ribolla Gialla del Collio has a greenish yellow color.
Olfactory notes
The bouquet, characterized by the scent of wild flowers, is pleasant and delicate. On the nose the typical notes of Golden apple and Kaiser pear blend with citrus ones.
Tasting notes
Great freshness typical of the vine and an almost salty flavor that goes hand in hand with a light minerality. The citrus notes return as a closing together with an elegant acidity.
To be accompanied with
Delicate seafood appetizer, sandwiches with tuna sauce, courgette cream, butter and salmon croutons or grilled chicken salad.
