Wine obtained from Sauvignon grapes, a vine of great importance, cultivated in the lands of Sauternes and Bordeaux, areas from which it was imported into Friuli, finding ideal soil and climate conditions there. Grown on hills, it prefers clayey and fresh soils, producing small bunches with medium-sized berries. The harvest is accompanied by soft pressing, followed by a short period of decantation in the total absence of sulfur dioxide. Fermentation takes place in stainless steel tanks with pied de cuve grafting at a controlled temperature, while refinement is carried out on the yeasts for 8 months.
