The “Longitude” Champagne Extra Brut is a blanc de blancs that comes from the exclusive use of Chardonnay grapes. The vines of this international variety are cultivated by the Larmandier Bernier winery following exclusively biodynamic methods, in the Premier Cru of Vertus and in the Grand Crus of Oger, Avize and Cramant. We are within chalky terroirs, which are well suited to the cultivation of Chardonnay. The must ferments spontaneously thanks to the presence of indigenous yeasts in both wood and steel, also carrying out malolactic fermentation. The refermentation takes place in the bottle, following the production criteria of the Champenoise Method. The Champagne remains on the yeasts to mature for 24 months, a period at the end of which the disgorgement, dosage and bottling procedures begin.
