They show different and composite morphological characteristics, with the presence of calcareous areas rich in marl, as well as stones and stones and partially clayey. The production plants are located at an average altitude between 80 and 400 meters above sea level, with exposure to the West/South-West.
CLIMATE TREND
The climate trend in 2011 was truly excellent. It can be considered one of the best vintages since 2000. The winter was harsh, with temperatures below the seasonal average especially in the months of November and January. Spring started early with mild temperatures and excellent water supply with gradual rains not accompanied by wind. This favored excellent vegetative development of the plants to the benefit of production. The summer was hot and long, but with temperatures within seasonal averages, with the exception of July where the heat was more felt, but with a good temperature range between night and day which avoided water stress on the plants and phenomena of overripeness of the grapes.
HARVEST
In the period preceding the harvest, the climatic conditions were completely suitable to allow the grapes to ripen regularly and to allow the harvesting operations to begin in the first week of September. The grapes arrived in the cellar healthy and well ripe with crunchy and turgid berries. The harvest operations concluded in the first week of October.
WINEMAKING
vinification in steel at a controlled temperature around 30° - 31°C. Two weeks of maceration of the skins, with various pumping over and délestages. Malolactic in steel.
REFINEMENT
At the end of the malolactic fermentation and after a rotation of decanting to ensure cleanliness, the wine begins the period of refinement in French oak barriques for a period ranging from 20 to 25 months. The duration of refinement is technically decided based on the seasonal trend of the vintage.
