Winemaking
The grapes are harvested by hand in October. After pressing
soft, the must ferments in contact with the skins in the tank
cement, for about 25 days, with daily pumping over and a
délestage mid-period.
Refinement
From 18 to 36 months depending on the year in barrels
50hl of oak from the Fontainbleau forest.
Perfumes
Hints of cocoa and chocolate, ripe raspberries, plums and notes
pepper.
Palate
Savory and juicy, soft on the mid-palate.
Pairings
Grilled liver sausages, long-cooked red meats
(Serving temperature: 16-17 °C).
