Capitel della Crosara: the “Capitello” at the intersection in a small village of Valpolicella; a very old stone on which the figure of the Madonna is painted; which in past times was used by the peasantry as a votive icon; the Montresor family, impressed by the Terroir and the charm of this area, established a collaboration with almost all the peasant families of the Borgo in the 1950s to be able to buy their grapes. The relationship between the producers and the Cantine Giacomo Montresor was so deep that it was said that Montresor came to have the Monopoly of these grapes.

WINE MAKING
Selected buches of grapes are placed in small racks and left to dry for about 3 months. Then the grapes are softly crushed; the maceration process lasts up to 30 days.
Afterwards, it is racked and refines in barriqe and big oak casks (French and Slavonian wood) for 3 years before bottling.
COLOR
Deep and intense ruby red color.
SENSORY EVALUATION
On the nose it displays characteristic fruity and musky notes. Dry and warm on the palate, slightly bitterish with scents of spices and violet, liquorice, blackberry and ripe cherry.
FOOD SUGGESTIONS
Good companion to all meat dishes and game of the international cuisine and matured cheeses. Meditation wine. Uncork the bottle one hour in advance. The use of a decanter is recommended.
